Hey everyone! Here is my most simple recipe yet; Eggs in a Basket – Jennifer Cabibi style!

So here is what you will need:

One Slice of Bread

One Egg

Non-stick spray

1 drinking glass

A skillet / Pan

 

First, place your glass cup in the middle of your piece of bread and apply pressure.

Jennifer Cabibi Egg's in a BasketThen, set your piece of bread aside while you heat up your pan on the burner at medium high heat. Use this time to spray the pan with your non-stick spray. When done with this, place your piece of bread in your pan. Then, set your piece of bread aside while you heat up your pan on the burner at medium high heat. Use this time to spray the pan with your non-stick spray. When done with this, place your piece of bread in your pan.

Let the piece of bread sit for about 30 seconds before moving to the next step. Next, crack your egg and instert into the hole.

While the egg cooks, lift of the edges of the bread with a spatula to see if the bottom of the egg is turning white. It should start to attach itself to the piece of bread.

Flip the egg over and repeat the previous step.

Once the oppisite side of the egg is cook and the bread is toasted, you have completed the dish! Your egg’s in a basket should look like so:

Spaghetti Squash Casserole

Here is a great alternative to carb-loaded noodles…SPAGHETTI SQUASH CASSEROLE. This is a recipe from me, Jennifer Cabibi.

Here’s what you’ll need:

1 medium sized spaghetti squash
2 tablespoons of butter
1 small yellow onion, cut in half and very thinly sliced
¼ teaspoon red pepper flakes, or more if you like it spicy
1 teaspoon fresh thyme
½ cup sour cream
½ cup shredded cheddar cheese

First, take the spaghetti squash and cut it in half (Lengthwise).

Gut the insides by removing the seeds with a spoon:

Place both sides of the squash in a covered dish with 1/4 an inch of water.  Then microwave for about 11 minutes (Plus or minus a minute).

While the squash is in the microwave, this would be a good time to make the onions. You can start this out by thinly slicing the onions. The recipe calls for one whole onion. However, I did not use the whole onion. It is up to you for how much to use.

After you have sliced the onion, combine the onion, butter, thyme, and red pepper in a medium sized skillet on the stove. Cook the mixture over medium heat until onions turn brown.

By the time you are done with the onions, the squash should be ready to take out of the microwave. You will know that the squash is ready because the squash will look tender.
 
Now here is the fun part. Set the onions aside when done. When the squash is cool enough to handle, take a fork and run it along the eldges of teh squash lengthwise to create the spaghetti.

Dump the spaghetti squash into a baking dish along with the sour cream, onions, and half of the cheese. Save the other half of the cheese for the top. Once this is done, stick it into the oven for 15 to 20 minutes at  375 degrees.

Hey everyone! So sorry for the delay in posts but I do have a great reason! I was in VEGAS for a WEEK! Yes, I met up with some family in Vegas! I had so much fun!

So here is what I made for my companies Thanksgiving Party:

Here’s what you’ll need:

2 (16oz) containers sour cream
2 cups cheddar cheese, shredded
2 (3oz) bags real bacon bits
2 packages Ranch Dip mix
1 large (28 – 30oz) bag frozen hash brown potatoes – shredded kind
A few sprinkles of Chives (For a garnish as presentation)

Before starting the recipe, pre-heat the oven to 400 degrees.

First add in the Sour cream:

Then add in the bacon bits:

Up next, add in the ranch dip mix:

And then, add the cheese:

Once you have added these four ingredients, you may now mix them all together:

Now that you have mixed it all up, you can now start adding in the flozen hash browns:

Now dump that into a 9 x 13 inch baking pan.

Last step:
Bake at 400 degrees for 45- 6o mins. Pull out of the oven when golden brown.
Mine took about 55 minutes. It is really up to how crunchy you like it.
ENJOY! I had many compliments from my co-workers! It was a winner for sure and I will definitely be making it again.

Deep Dark Chocolate Cookies – Butterless and Flourless

Hey everyone! I was having a craving for some chocolate so, naturally, I chose Deep Dark Chocolate Cookies. As with most of my recipies, this is my first time to make the recipe. Let’s do this!

Here is what you will need:

Nonstick vegetable oil spray
1 1/2 cups bittersweet chocolate chips (about 9 ounces), divided
3 large egg whites, room temperature
2 1/2 cups powdered sugar, divided (I used 2 cups)
1/2 cup unsweetened cocoa powder
1 tablespoon cornstarch
1/4 teaspoon salt

Let’s start by setting the oven to preheat at 350 degrees.
 
Next we will melt just 1 cup of the chocolate chips. Set the rest aside for later.

While the 1 cup of chocolate chips are melting, go ahead and start mixing the egg whites and 1 cup of powdered sugar. I’m using an electric mixer at a very high speed to make a soft peak consistency.

Once you have reached the soft peak consistency, start folding in another cup of powdered sugar. Now, we can start putting the melted chocolate chips in the mix. Also, start adding in the corn starch, salt. cocoa powder and the last of the un-melted chocolate chips.

The mix should now be a very sticky and almost fudgy consistency. 
 
Now this is the fun part. Use a spoon to make a small scoop of mixture. ball up the scoop and roll it in the 1/2 cup of powdered sugar that is left over. Place the ball onto the cookie sheet.

Once all the mixture is balled up, rolled into the powdered sugar and put on the cookie sheet, place cookie sheet in oven for 10-12 minutes. Set the timer
 
Once the timer goes off, take take cookies out. Please note that the cookies will still be very gooey. Take them out anyways. They will harden when they cool.

Cinnamon Roll Cookies

Yup, That’s right! This is real!! This recipe for CINNAMON ROLL COOKIES was so tasty. However, I caution all begginer bakers. It was by far the hardest recipe I’ve ever made. But, If I can do it, anyone can! So, here goes the recipe!

For the Cookie:

  • 2 cups of flour, plus 2 tablespoons flour
  • 1 teaspoon cinnamon, plus 1 tablespoon for divided use
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, softened, plus 3 tablespoon for divided use
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar, plus ½ cup for divided use
  • 1 egg yolk
  • ¼ cup applesauce
  • 1 tablespoon of light corn syrup
  • 1 teaspoon vanilla

For the glaze

  • 1/2 cup powdered sugar
  • 2-3 tablespoon of milk (I used Whipping Cream instead)

Step by step instructions:

First, you will start by combining the flour, cinnamon, salt, and baking soda. Set this aside until later steps.

Next, combine ½ cup butter, granulated sugar and ¼ cup of brown sugar

After this, add in the apple sauce, egg yolk, vanilla, and light corn syrup.

Now, you may slowly add the bowl of flour, cinnamon (one teaspoon), salt, and baking soda that we mixed up in the first step.
This is what you should have by now:

Now this is where it starts to get a little bit more advanced. Take a piece of wax paper and divide the dough into halves. To do this, I just poured it all into one and rolled it up. Then split it by using a knife.

Now, you will put each halve in the fridge for 30 minutes. While this is in the fridge, we can move onto the next step.
Go ahead and mix the remaining tablespoon of cinnamon with the half cup of brown sugar.

Now divide this mix and seperate into two.

Once 30 minutes has passed, you may pull the dough out of the fridge. Now take one half of the dough and flatten it onto wax paper. Once flattened, spread the remaining butter onto the dough.

Now, we will use the brown sugar and cinnamon mix that we made earlier. Remember how we split the mix into halves? Well, now take one half and sprinkle it onto the buttered dough. After this step, we will use the wax paper to roll up the dough just like we would do with a rug. This is where the recipe started the get easy again. So, the hard part is over.

 Place the rolls back into the fridge for another 30 minuties Now slice the rolled up dough using a half inch measurements and place onto a cookie sheet. Up next, lets put those bad boys in the oven! let them bake in the oven at 350 degrees F for 8-10 minutes.

 While waiting for the cookies to bake, let’s make the icing. This is the easiest part. Just simply mix the powdered sugar with the milk (as I said earlier, I used whipping cream).

Once the cookies are done, let the cookies cook for about 10 minutes then drizzle your icing on the cookies. Then, finally, you are done so ENJOY!

My Four-legged Friends

Lucy is a Boston Terrier and also the oldest of the three. My family has had her from a long time. She started out as my dog but my mom quickly took over! Lucy and my mom are almost inseparable!

 

Maggie is the youngest. She will be hitting one year in November. I adopted her from a Petsmart in Lubbock, Texas.  In case you are wondering, I went to school at Texas Tech so that’s why she was adopted in Lubbock. I want to do something special for her birthday coming up. Does anyone have any birthday party ideas? I found a recipe to make pumpkins dog biscuits so I will for sure make those for her birthday. Maybe something like a dog party or take her to the dog park. I also want to dress her up for her birthday. Every girl needs a birthday dress!

 

Sophie is a Labrador that is a couple months over a year. The quirkiest thing about her is that she is afriad of the garbage man! So weird, right? On Monday’s (trash pick up day), she will not leave the bedroom until the morning is over. That way she knows that the garbage man has already passed. She also doesn’t like to swim! Have you ever heard of a lab that doesn’t like to swim!?

I am so blessed to have these three doggies in my life!

Last Night, I made RED VELVET CHEESECAKE BROWNIES for the first time. I was a little nervous making these brownies because this recipe is completely new to me. Also, most of my baking usually comes from a box so baking from scratch is all new to me. But, surprisingly, the brownies turned out GREAT and my parents had a good time being my guinea pigs.

If you want to make these, here are the ingredients that you will need:

Red Velvet Layer:

  • Unsalted Butter – 8 tbsp (1 stick) – melted
  • Sugar – 1 cup
  • Vanilla Extract – 1 tsp
  •  Cocoa Powder – 1/4 cup
  • Pinch of salt
  • Red Food Coloring – 1 tbsp
  • Vinegar – 1/2 tsp (original recipe is 1 tsp)
  • Eggs – 2
  • All Purpose Flour – 3/4 cup

Cream Cheese Layer:

  • Cream Cheese – 8 ounces (softened)
  • Sugar – 1/4 cup
  • Egg – 1
  • Vanilla Extract – 1/8 tsp

Along with these ingredients,  you will also need an 8 by 8 baking pan for the brownie mix.

To start off, pre-heat your oven to 350 degrees while you are creating the mix.

To make these brownies, you will make the cream cheese layer and the red velvet layer separately. To keep it simple, combine all the ingredients for the red velvet layer in one mixing bowl and all the cream cheese ingredients in another bowl.  I will note that as I made the brownies, I forgot to put the vinegar in the mix and it taste great without it so if you do not have vinegar, you’re brownies will still be fine.

Then, you will put 3/4th of the brownies in your 8 by 8 baking pan. Save the rest for the third/top layer. Then you will put the cream cheese layer on top of the red velvet layer and spread it around. Don’t worry if you accidentally mix the two layers when you are spreading the cream cheese layer. After this layer, spread the remaining batter from the red velvet mix.  Take a knife or the back of a spoon to create the swirling effect. Swirl your utensil in a circular motion or a figure eight – You decide!

Next, you will put the brownies in the oven for 30 minutes. To be safe, I put my timer on 25 minutes and continued to check on the brownies for the next 5 minutes.

When timer is done, pull them out of the oven to cool and ENJOY!
